Garlic Scape Veggies

Ingredients:

  • 1 tbsp (15 mL) vegetable oil
  • 1 lb (500 g) chopped garlic scapes
  • 1 onion, thinly sliced
  • 1 diced red pepper
  • 1 tbsp (15 mL) minced ginger root
  • 1 cup (125 mL) snow peas
  • 1 cup (175 mL) chicken or vegetable stock
